How to make veg cutlet. ( Vegetable cutlet.)

Veg cutlet is a crispy, savory, yummy and quick to make delicious patties. It is a famous Indian tea time snack. It is made with mixed vegetables, herbs, spices & breadcrumbs in different shapes & sizes. Veg cutlet can be made both vegetarian & non-vegetarian by just changing the stuffing inside it. Both are equally delicious, but I prefer veg version, so let's make veg cutlet.....

Ingredients:
2 potatoes
1\2 cup peas
1 cup carrot
1\2 cup paneer
1\4 cup sweet corn
2 tbsp coriander leaves
1\4 cup breadcrumbs
1\2 tsp red chilli powder
1\4 tsp cumin powder\ jeera powder
1\2 tsp coriander powder\ dhania powder
1\2 tsp dry mango powder\ amchur
2 tbsp all purpose flour \ maida
1 tbsp corn flour, or u can add besan also
 1\4 tsp pepper powder
1\4 tsp salt
Oil for frying.

Directions:

1. Firstly, cook & mash all vegetables completely.
2. Add 1\4 cup of breadcrumbs into them.
3. Now add all the spices 1\2 tsp chilli powder, 1\2 tsp coriander powder, 1\2 tsp amchur powder, 1\4 tsp cumin powder and 1\4 tsp salt.
4. Mix & combine everything well.
5. Now make batter by mixing 2 tbsp maida & 1 tbsp corn flour or besan and 1\4 tsp pepper powder & pinch of salt.
6. Add water as required and prepare a smooth lump free batter.
7. Now take ball sized vegetable mixture and shape it into round or long roll shape as u like.
8. Dip in the maida batter take out and coat it with breadcrumbs.
9. Deep fry in hot oil on medium flame till it turns golden & crisp.
10. Serve veg cutlet with mint chutney or tomato sauce as u like.
