How to make tasty samosa. ( Quick & easy samosa recipe.)


Samosa is a beloved Indian snack food. A savory filling of spiced potatoes, onions, peas, lentils and sometimes meat also. Samosa with mint and sweet chutney or fried green chilli, tastes lip smacking delicious. It is a simple and quick recipe anyone can make it .....though it took some time for me to make it perfect, but I didn't give up and as they say third time's a charm ....I got it right and it proved to be delicious. So let's get started and make yummy samosa's...........

• Prep time: 10 mins
• Cook time: 45 mins

Ingredients:
For dough:
• 2 cups All purpose flour\ Maida.
• 1 tsp carom seeds\ Ajwain.
• 1 tbsp oil.
• Pinch of Salt & Water to knead.
( I also add  ½ tsp of chilli powder, its optional.)
      
For stuffing :                                              
  • 2 tsp oil 
  • 1 tsp cumin / jeera
  • ½ tsp coriander seeds (crushed)
  • ½ tsp fennel / saunf                           
  • 1 chilli (finely chopped).             
  • ½ cup peas / matar       
  • ½ tsp kashmiri red chilli powder
  • ½ tsp coriander powder
  • ¼ tsp cumin powder / jeera powder
  • 1 tsp aamchur / dry mango powder
  •  1 tsp garam masala
  • ¼ tsp pepper (crushed)
  • ¾ tsp salt
  • 4 potato / aloo (boiled & mashed)
  • 2 tbsp coriander (finely chopped)
  • 5 cashew / kaju (chopped)  (optional)
  • 2 tbsp raisins / kishmish      (optional)
  • 2 tbsp coriander (finely chopped)
  • For frying oil.                                                         
Directions:

1. First in a large bowl take  maida, add         ajwain, chilli powder( optional), salt,      and   knead the dough and keep adding water as required .                               
2. Knead to tight dough and grease with oil and keep it aside.                                    
3.  Boil potatoes and peas in a pressure        cooker for 3 whistles.
4. In a large kadai take 2 tsp oil and saute  1 tsp cumin,  ½ tsp coriander seeds, ½ tsp fennel, add 1 or 2 chillies.
5.Add boiled and mashed potatoes and peas.
6. Now add spices, ½ tsp chilli powder,  ½  coriander powder, ¼ tsp cumin powder,   ½ tsp aamchur, ½ tsp garam masala,   ¼ tsp pepper and ¾ tsp salt.
7. Mix and saute for few minutes, combine everything well.
8. Lastly add chopped coriander leaves.
9. Add cashews and raisins. (Optional.)
10. Mix all well, samosa stuffing is ready.
11. Knead the dough slightly and make small balls of it, with the help of rolling pin roll it in round shape and cut it with the help of knife in half, dividing it in two equal portions.
12. Now grease with water and make a cone, gently press so that it seals properly.
13. Add the samosa mixture into it, close the parcel, and deep fry it in hot oil on low flame until it turns golden.
